Two brothers, one shared heritage

In 2025, two paths lay before us: let a family craft fade away, or take it on in our own way. We chose to keep alive what has driven our family for over 120 years, and to give sweets a place worthy of them once more.

Founding of Établissements Jean Ratti in Paris: a manufacturer of confectionery machines. The house's oval emblem is born. Its machines soon equip confectioners well beyond Paris.

The making

A production that is methodical

From the selection of ingredients to dispatch, six steps carry each confection with the same care.

    Selection

    Sugars, dried fruits and natural flavourings are sourced with care, from trusted suppliers.

  2. 02

    Preparation

    Weighing and measuring are prepared to the recipe, format by format, to guarantee consistency.

  3. 03

    Cooking

    The sugar is cooked at a controlled temperature, then poured, pulled or coated depending on the range.

  4. 04

    Inspection before bagging

    Appearance, size and seal are checked before each batch is approved.

  5. 05

    Bagging

    Each sweet is slipped into the signature pouch, with care for the small formats.

  6. 06

    Shipping

    Orders are prepared and shipped in protective packaging, from our workshops.

What flavourings and colourings do you use?

Natural flavourings only, and no artificial colouring. Taste and colour come from the recipe, never from additives.

What is in an assortment?

The Discovery Assortment brings together our five olivette flavours, in 50 g or 100 g pouches. The Signature 1904 Assortment gathers two pouches of boiled sweets of your choice, the almond and peanut chouchous, and a case of 8 lollipops.

How do delivery and shipping work?

Your orders are prepared at the workshop and shipped within a few working days. Delivery is free from €50 in France and from €90 in the European Union.

Do you offer personalised pouches for professionals?

Yes, from 50 pieces, with a minimum lead time of one month. Personalisation is always handled by quote, never online. Contact our professional services team.

How long do your confections keep?

Kept dry and away from heat, our confections retain their qualities for several months. The best before date appears on each pack.

Are your products suitable for special diets?

Our confections are gluten free and lactose free. Allergens and composition are specified on each product page.
