Chouchou (caramelized almonds) is the scent of funfairs and winter evenings, when you could smell the hot sugar even before seeing it. We make it the way it's always been done: whole almonds, sugar, and the patience of caramel. Nothing else goes into the recipe: 60% almond, 40% sugar. The result crunches, then melts, leaving that toasted warmth that evokes a specific memory for everyone. To nibble on as an appetizer, to put on a dessert, or to give as a gift for the simple pleasure of rediscovering a taste of childhood.
